Quality output

I probably should know this, and it maybe just a silly thought, but is it possible to get greater quality via component or S-Video out? I know that this is not the same as SDI out, but wondering if the tape signal/compression is the same for all output options.

As compared to what? Recording to tape?

You would get better results recording to tape and then capturing it via FireWire.

By going from camera, to S-Video jack, and then onto tape, your signals gets converted from digital, to analog, and then back to digital again. By just recording straight to tape, it stays digital the entire time.

Is it possible that the output to tape, on the DVX100, is converted to digital for tape storage. Is there an analog signal created before the ccd chips, or is there an analog signal converted to digital after the image is exposed to the chips? If so, then a converter box might do a better job than the DVX100 conversion by using a composite or s-video out, or maybe not.
