This will get you close, at least for gamma and skin tones:

Gamma: Cine1
Black Gamma: wide, level -7
Color Mode: Pro
Saturation:+4
Color Phase: -2
Color Depth: R+3, G+2, Y+2

This is not an exact match by any stretch, but at least the gamma curves appear to be very close. The green in foliage seems to be interepreted very differently by these cameras, but most other hues/tonal values should be close. Also, the white balance seems to yield different values (at least with my cameras), so you will have to adjust for that.

The Movie color mode might be better in some circumstances, it seems to boost the saturation of warm hues at lower tonal values.
 
I'll add that I'm seeing different white balance numbers when I custom white balance with the two cameras, the Canon usually comes up with a warmer value. And it looks to me like even at the same color temperature, the Canon image is warmer in the mid and lower tones (hence the movie color mode suggestion), and may be a bit cooler in the highlights. Also, the Sony seems to really boost a very narrow range of reds in the lower tonal values, so a secondary CC is probably needed if you have a red object in the scene.
