Phillip Bloom talks FS100 Picture Profiles

I don´t get his favourite profile. Why Cinetone 2 gamma and a knee setting of 75 / -1?? That lets the highlights blow out totally early and ugly.
Cinetone 2 and Knee 102,5 / -1 is definitely the sweetspot.
or
Cinetone 1 and Knee 90 / +2 to gain about a stop in the shadows but lose it in the higlights.
