Looks like the FS5 would not be able to tilt up/down without hitting that gimbal.

Yeah unless it has extendable arms I don't see the point. I can techically fly my FS5 on my EC1 but I don't think I ever would since the clearance is so tight. I love using single handed gimbals with a small A7S2 rig that has full clearance in almost every axis so you can just spin the whole thing around nonstop and operate in pretty much any position you want immediately.
Only thought is maybe on the FS5 you could buy a lot more clearance by using a U60 battery or otherwise adding weights to the back to put the COG closer to the back and mount the camera much further forward...
