Although it's not technically a scene file setting, I'd recommend against shooting in squeeze mode if you're doing a 60i finish. Shoot in letterbox, or reframe after shooting 4:3. Good luck!

Edit: This assumes that you're finishing in widescreen though. If not, then never mind what I said.

For shooting fast moving sports like snowboarding it's usually a good idea to use a higher shutter speed than normal to avoid motion blur, i shoot a lot of BMX and find that 1/120 seems works best. this has it's downsides also (there's plenty of articles on shutter speed on the web explaining all the pros and con's) however in most cases a higher shutter will yield a cleaner picture when shooting extreme sport.

Trial and error is usually the best way to figure out your scene files, however I wouldn't recommend making your detail levels any higher than 0 though, or generally going to the extreme end of the spectrum on any of the settings as you can quite easily ruin your footage by doing this. (what looks good on a 3 inch lcd doesn't always look good on a 30 inch TV...) Plus, the more neutral and raw you shoot your footage, the more room you have in post to give it the look you want, most of the scene file settings are achievable to a better degree in any of the main 3 NLE's.
