Need to record a remote interview

My step-daughter won the regional "History Day" contest with a documentary. One of the suggestions from a judge was to try and get/record an interview with some of the subjects of the documentary for the next round which is the state competition. A couple of them are willing and I'm wondering what the best way is, as they are several states away.

I was thinking of installing Skype, but I'm not sure if it only records audio or it will also record video. Anything else free/cheap?

Quick solution - it's called "sim-sat". Your step-daughter phones the subject and conducts the interview over the phone (both using hands-free phones). You video/audio record her, someone video/audio records the subject and sends the file to you for editing. Voila!!
