Need help with dvd authoring!

I am filming a 3 hour long acrobatics show with a sony ex 1 and a panasonic ag100. The end result needs to be a 2.5 hour long, standard definition, widescreen dvd. I have never a project of this sort and have some work flow questions:

1.) The file sizes from both cameras are going to be huge and I am concerned when all is said in down that I will not be able to get the final edit compressed down enough to fit on a duel layer dvd.

2.) Since both cameras shoot only HD, once I have the footage should I edit it as HD and then compressess or should I import the footage into a FCP SD timeline? Doe it matter?

3.) What are the best sequence setting for widescreen SD?

Any help i can get will be most appreciated!

Thank you!

Edit as normal HD footage, and export self contained and current settings.

Use a modified SD DVD Compressor preset consistent with the length of the movie in total minutes and a DL DVD.

Take m2v and ac3 files into DVD SP, and find the area on the timeline to place an acceptable layer breakpoint

Thanks David! Would you shoot in the highest quality possible or 1080 X 720? Can you recommend a good "modified sd dvd compressor preset" for widescreen sd dvd? And my last question is about the acceptable layer breakpoint. What does this mean? Forgive me if that's a dumb question.

Also, I've exported another dvd project via the compressor with the 90 min dvd setting and the video looked horrible. Any insight on this?
