Most Useful/Insightful Behind the Scenes/Making of DVD/Blu-ray movies?

I love the commentary on Brothers McMullen. Burns gives the best, most useful class on indie filmmaking I've ever heard on a commentary track.

I found the BTS for el Mariachi by Robert Rodriguez is without a doubt a hands down winner

wheel chair dolly's, ladder cranes ... "its film school 101" (thanks Ian, you know who you are)

The DVD of "Die Hard" has a really comprehensive set of bonus features. The most complex I've found to date.

Not only is there a feature on tech stuff like Pan & Scan; but also modes that let you re-mix the audio to a scene, and re-edit another one. Amazing stuff for DVD!

The Criterion Collection version of Traffic. TONS of awesome commentaries, color correction demos, sound editing process, etc. It's fantastic, and I got it for only $10 :D

The new Star Trek has a bunch of BTS.

Yep, Rodriguez's BTS stuff is great for any indy filmmaker I think. I found the BTS on "Collateral" to be awesome as well as a little sci-fi film called "Gabriel". Tarantino's BTS on the "Reservoir Dogs" anniversary edition was massive. We got to see him do some scenes from the film in a film camp setting as we'll some film festival stuff. I enjoyed it.
