kipon adapter for eos glass

I've just bought one of these:
http://philipbloom.net/2010/12/17/ne-adaptor-for-using-you-canon-eos-lenses-on-gh1-gh2-af101/

Bloom recommends setting the eos iris wide open on a canon camera, then fitting to the adapter and attaching to your gh1. I imagine I'll be able to control exposure ok by using my lightcraft variable nd filters along with the adapter's built in iris. What I'm wondering is if you absolutely have to fit your lens with the aperture wide open, or can I stop them down to nearer the 'sweet spot' we know about - say f8 for example?

thanks in advance

Why?

One of the main reasons why you'd want to use a 70-200/2.8 or 17-50/2.8 is for the f2.8. Otherwise, it's much better to get an older manual focus lens that's a lot cheaper but handles better.

On smaller sensors like the aps-c or 4/3rd, you'll hit diffraction before f8, so f8 is not the sweet spot.

Regardless of the maths, some lenses perform better a stop down from wide open - just looking for another user to chime in
