Iris, nd filter, and shutter settings

Hello,

I'm hoping to get some opinions from those more experienced than myself (pretty much anyone). I'm trying to test out my HVX200 on some different settings to see what gets me the best results. However, I'm shooting under a roof (which provides shade) and there is a bright background in the sun. When I look at the zebra stripes, my background is all too bright if I can see my main subject in the foreground.

I'm attempting to shoot hummingbirds using 60p so that I can see how well the slow-motion works. My shutter speed is set at 1/250, I've set my white balance manually for the subject's lighting.

I set my focus by using my EVF DTL, focus assist with an open iris zoomed all the way in on my subject. After that, I set my iris to 6.8 (which looks good for the subject on the viewfinder).

Does anyone have any recommendations for properly setting my iris? Is the shutter speed I've chosen right, or is it just a matter of testing/preference? And should I use the ND filter to try to darken the scene so that my zebra stripes are minimal even if it makes my foreground appear darker?

Sorry if this is a lot of questions, but opinions or advice on any of these will be great. Thanks,
