I typically use my iPad and the camera connection accessory to upload stills from my 60D in order to select keepers, and then upload those to my computer. I'm able to upload footage I shoot as well but it's not viewable on any iPad app I know of. Is there an app that allows upload and then instant viewing? thx

I use my iPad 2 (and prior to that my iPad 1) for a lot of presentation stuff in meetings. jpegs and mpegs, also use it for going over dailies.
Fast way is to compress a 480p mp4 and push it thru iTunes > movies > sync
a slower way but a much nicer way as it circumvents the control of apple is to use dropbox ipad app and favorite it to store it on the ipad.
also gives you folder structure on the ipad

1080p files from my 5D and imported through the camera connection kit are watchable with 1st Video for iPad 2 (does not work on the first iPad). I wrote a blog about it with test files: http://www.Toskian.com/?p=125

If you are willing to jailbreak and go the Cydia route, you can get VLC which plays *everything* you through at it. Potentially. I haven't actually tried it with the iPad, so I'm not 100% certain it will do what you ask.
Personally, my 10" Android tablet plays anything I throw at it so its become my favorite device (also enjoy flash browsing, but that's a whole different discussion!).
