Interval Recording for Time-Lapse - URGENT!!!

I am planning a shot (TOMORROW) that includes a time-lapse of a couple moving into a house, showing the progression of all the stuff they move in a few seconds. What would be the best Rec Time and Interval Time to do this? Anyone with experience along these lines?

I shot some clouds last week for about 8-10 minutes then as was said, I sped the clouds up in final cut pro to a speed of 2000% and it came out decent. I say decent and not good because it was windy that day and you can tell the camera was bouncy even though it was on a tripod.
