Infinity?

I can't seem to find a clear explanation on to what the infinity setting on the camera does. The manual says that it focuses on infinity and then switches to manual focus. So, what does this mean in plain English? If you push down the focus switch to infinity does this mean that your camera will have everything in focus up to infinity, and stay there? I guess my question is, what purpose does the infinity option serve?

Infinity is just another distance to focus to. So you can focus to 10 feet, or 3 feet, or 20 feet, or infinity -- meaning, that things that are a very long way away will now be in focus. Such as the moon, or a mountain.

So if I push down on the infinity switch on the camera I can assume that this is the best setting if I am shooting a large scene with no primary subject in the foreground? Here is the scenario: I am filming an interview that is manually focused on the eyes of the interviewee. I want to break away and take a panorama of the scene beyond the interviewee. How can I ensure the best focus for this breakawy view of the larger scene.
