If you had to choose a lens for the A7s

Sony SEL - 35F14Z FE 35 MM F1.4 ZA E-Mount Zeiss Lens
Sony SEL35F28Z E-mount Carl Zeiss Sonnar T Lens for 35mm
Sony SEL55F18Z E-mount Carl Zeiss Full Frame Prime Lens

Zeis Batis lenses?

Not sure which one to use, I will be doing medium/close shots, I want 1 lens to start with and then later I will be buying a macro lens.

I would buy a cheap zoom lens and figure out what focal length I most like shooting with and go from there. I personally wouldn't want to be just limited to one focal length or one lens, and everyone has a preference focal length. I personally love a 35mm on a full frame body, so would opt for the f1.4 Zeiss.

The stock lens that comes with the A7s (28-70) really ain't bad for it's price, and would be a great starting point to add other lenses to round out your arsenal.

The Sony Zeiss 16-70mm f/4 will be your guy !
It's not a full frame lens. And while the A7S has great HD in S35 crop, f4 might be limiting for that shallow depth of field (which might be why you got a full frame camera to begin with).
Also, if you want to use it as an occasional stills camera S35 crop only gets you 5mp images.

for a one lens solution the Sony Zeiss FE 24-70 f4 seems like a good starting point. (Or as stated earlier, even the kit lens)

Sony 55 F1.8 Z E-mount is a nice lens. I would hang tight for a few months and wait for new E-mounts to be released. The selection is just super thin now. Sony 16-35 is also pretty good.

Why not try cheap manual primes like a Canon FD 35mm f2.8 and a 50mm f1.4 and decide which FOV you prefer of these two, and you can upgrade from there if you wish.
As written before, for 12MP stills or video (and as a first lens) the SEL2870 isn't bad either (the OSS is rather good, too).

Well you clearly want a 35mm or something similar. If I had an A7S I would get the Zeiss Sonnar 55mm f/1.8 for sure.

But I would also get either a 24-70 tamron f/2.8, 24-105 sigma f/4 or potentially the Zeiss 24-70 f/4 which would go nicely with the Sonnar.
Like others have said being trapped with one focal range would suck. I'd get a decent high quality zoom like the ones I have mentioned and then get a prime for your favourite length afterwards.
Otherwise it's going to make your life as a shooter hard being so confined. At least with the Zoom you will have everything, especially something like the Sigma it'll cover all your bases.
And doesn't matter how fast the lens is with an A7S and it's lowlight sensor magic so yeah. My two cents.

I would say 55mm f/1.8 or 35mm f/2.8, but really, why the "one lens" limit? It doesn't make sense to me. For the price of a Batis lens you can buy the Samyang 35mm f/1.4, 50mm f/1.4, and 85mm f/1.4, and still have spare change for probably ten copies of the Industar I-61 (52mm f/2.8).

because I want to start filming and I am waiting for the new lenses to get released, also I will be going on a plane soon and want to limit the amount of space I use up by just using one lens for now.

I use Voigtlander glass for m-mount. Small and light, perfect for travel. IQ is top notch ;) And they are actually beautiful lens.

Get a zoom lens and figure your affinities. There is no point in going with other peoples' preferences.

Start with kit zoom. Maybe entertain new 28mm and the wide angle adaptor? Alternatively the FE 35 F2.8 is a nice compact lens.

Just gonna echo and agree that the 28-70 is a great lens to start with.

Often times when I travel and want to keep light, I simply also bring a canon 50 1.4 with metabones adaptor, and if you want to get wide coverage... the sony 10-18 f/4 is great even tho its a crop lens, but gets full frame coverage through half the length and very little (and fixable) vignetting at after 14mm.
