How to keep iris open? Which ND filters, what else?

I need a shallow DOF and want to keep the iris open in most situations. I own a B+W 102 ND (ND2) filter, but am worried that in certain situations I might also need ND4 or ND6.

What is the perfect filter set to always guarantee an open iris?

Are there ND filters that are variable?

Any other ways to keep the iris open for DOF (besides mini 35 adapter)?
 
I'd just use the built in ND filters and add the ND2 that you own if you still need more. That should be more than enough.
