How do you White balance/expose for G Log A?

So when I used My 5D I used to expose and white balance on neutral and then slam it over to cinestyle and wham! there it is, but I am just a little confused about G LOG- A, is there a certain procedure involved to make sure no to under or over expose? Plus properly whiter balance? Sorry for the ignorance,,

Don't use white/grey cards, they mess up the skin tones in my LOG profiles, because WB on cards uses a 3D matrix.
Just use the manual temperature dial and tune the skintones to your taste.

For exposure you want a waveform monitor and false color (but it can also be done with the histogram, but not so elegant)
Set your Black Levels in the menu for every scene a hair above zero and than bring the skintones down to 35-45 IRE. Re-adjust black levels as needed.
Everything else should just fall into place.
