How do they get this nice color/contrast/saturation? Is it the camera settings? If so Which? Is it in Post? If so how?

That thread is for the DVX it's an older camera so the HMC may call it something else, but you can start there. It does have v detail level in
Menu> Scene File.

I just did a test using the "8Ball" specs! AWESOME! THANKS! I feel like I have a new camera!
I imagine there are ways to sane the settings in the camera etc?

I advise shooting with as much dynamic range as possible and doing making your looks in post. For example:
