Help with scene files

I'm shooting a project in my Cinematography class on a DVX100B. It's about someone born blind who can see for only a day. I know how I want to give the effect, but I don't know how to achieve it. The only thing I'm having problems with is I want it to be as saturated as possible. Our teacher is making do as much in-camera as possible and avoid much post-production as far as effects go. So does anyone know the best way to achieve a very saturated image using the scene files? It will only be saturated in the subject's POV. I also want to work on F1 so it's less filmic in these sequences and looks more like our eyes do. Also, I want to open up as much as possible so it has a small depth of field and even blows out a little. This is all to add to the effect of his eyes not being used before. Any ideas? I'm mostly talking about ideas with the scene files, but other creative comments are appreciated as well.
