HELP: dvx100b mosaic look on original content in concert environment

I have just recently purchased three dvx100b cameras.
I have shot a few concerts and have just now reviewed the footage.
There is a mosaic, pixelated, jig-jagged, almost zebra like look to the edges of objects especially where there is alot of red or deep blue. It does not show on the viewfinder when you are shooting the content.
It is on all 3 cameras footage so I know it can't be a camera issue... is there a setting that I am overlooking? Can the cameras not handle this environment?
I have played with light levels and can't seem to make it go away.

The only thing that I have noticed is that my Chroma levels in post are a little high... but I have never seen anything like this before. I have to use a blur effect on the red and use a proc amp on the chroma to get anything even close to acceptable... yet it is still very apparent that something is wrong.

Any tips or troubleshooting ideas would be very appreciated.

I assume you're talking about the horrible red channel inherent in 4:1:1 video? If so, there's no getting around it. Red ends up with the lowest resolution after compression. Usually it only looks bad on a computer monitor. Once you play it back on a TV it shouldn't be quite as bad.
 
This is more extreme... the mosaic boxes are very large and even on a good NTSC monitor the image is awful. I have plenty of other DV footage in this environment that does not have the same problem.
