GH5 GH5, GH5s in Anamorphic 4x3 using spherical lenses

I was talking to a RED user who always shot in 8k as this used the full sensor and then he cropped in post according to the project. Can the same apply to the GH5 and GH5s? Can I shoot in 4x3 Anamorphic to use the full sensor - I've been experimenting with producing social media promos and it seems much easier to crop to 1x1, 16x9 and 9x16 to produce different aspect ratios for different platforms - any thoughts?

There's no law against it, people used to crop 4:3 SD to 16:9, and people have experimented with your suggestion for 5 years (see this article).

The video cropped to 16:9 should be 5.2K 10-bit 4:2:0.

If you're just delivering for the web for people to view on their phones, then you don't need that much resolution. I think simultaneously framing for both 16:9 and 9:16 causes too many compromises, and think it's best to have a 2nd camera operator getting a vertical shot for all the morons who are too lazy or stupid to rotate their phones into landscape mode.
