Likely user error/post error...which framerate? 60p? (You're listing the resolution which is irrelevant.)
Also double-check if your shutter speed was actually 1/125 because in case it wasn't and it was below 1/60 (like 1/50) for 60p, you will have strobing and trailing. Needs to be 1/60 or above, preferably in the 180° to 90° angle range for most applications (like 1/125).

I haven't used the GH1 in like 15 years so if there is one framerate to choose from in 720p then you'd be correct, but I don't remember (and they never make cameras like that anymore).
But if that's the case, check which framerate it is because it has to be at least 60p for smooth slow-motion otherwise slowing down 24p/30p won't work how you'd likely want it to.
