To set manual focus assist offf, use Custom menu. See page 80 of the manual for details.
Settings made by the camera (eg shutter speed when in aperture priority mode) are not displayed. See http://www.dvxuser.com/V6/showthread.php?t=176762 for some related matters.
Make sure you use Creative Motion Picture Mode if you want to set exposure to your own values - in other modes it's in full auto.
Yup, there's no substitute for reading the manual with this camera - otherwise you have many, many hours of experimentation ahead of you.

Just got off phone with a reasonably intelligent guy at shopatron. He called someone over at panasonic for me while I was on hold and got this info.
My questions:
#1 When are more cameras coming in?
#2 Why have people who ordered later than some of us gotten their cameras sooner?
#3 There seems to be a correlation between the above and whether or not a persons order was handled by shopatron, is this the case?
#4 Again, have any orders done through shopatron been filled?
#5 When new stock comes in are shopatron people going to be out of luck even as panny direct orders are filled?
His answers after consulting with panny.
#1 New shipment at the end of the month.
#2 Panny says there is supposed to be an order to the list and that they're following it.
#3 This should not be the case, people getting their orders filled out of order shouldn't have a corelation to whether or not they where shopatroned.
#4 Panny doesn't know, neither does shopatron because they just help put the orders in, not necessarily fill them..or something.
#5 This should not be the case.
If your order is not filled by the shipment at end of month it should be filled by late august, early september.
Also made sure he knew there was a big fat community for this camera and we were all sharing info and not happy with getting screwed over.

Ohhh boy do those people annoy me! You want the thing for photos?! Get a G1 or a D5000 or something and get the hell off of our preorder list. Stop clogging up the line photographers...you have dozens of other options, us, not so much.
