GH1 Setup sequence?

Just got my GH1 and have been following the posts for a few months. I have learned a lot but want to list what I believe has been stated as the best settings etc. I know there are a lot of holes in it, but could someone who has mastered this camera set me straight.

Thank you.

FYI - I'm looking for the most film-like images and I have the USA model.

1080 24p
Creative Camera Mode
Full Manual mode (is this done simply by setting the Mode dial to M?)
Contrast -2
Saturation -2
Smooth Mode
Turn the OIS on or off? (ie does OIS degrade the picture?)
Shutter speed (1/50 or 1/60?) Not sure yet. (Would 1/40 be more film-like?)
ISO 100 to 300 ?

*If there's anything wrong or missing with my list, please let me know.

1080 24p .. or 720 if you are going to using a lot of movement
Full Manual mode (is this done simply by setting the Mode dial to M?)... Select Creative Movie on the top dial, then go into the menu's, select M from the PASM options

Turn the OIS on or off? (ie does OIS degrade the picture?) .. OFF

Shutter speed (1/50 or 1/60?) Not sure yet. (Would 1/40 be more film-like?).. 1/50 - 1/60 or 1/100 - 1/120 if you're shooting 720 60 for slowmo

The film setting you'll just need to play with to see what suits you, maybe start with Standard and knock back contrast and saturation to suit.

There is a ton of stuff in the FAQ on this, which is probably the best place to start

Yeah the FAQ section has been great. Jack has a lot of info on this camera in here.
The full manual mode confused me at first also because I tried to just jump right into shooting without reading the manual. Read it thoroughly and it will be helpful. To be full manual in video you have to set the dial to creative movie mode, than menu, and it is under movie exposure settings. Set that to M as Adrian pointed out and you can control shutter and f stop manually.

1080p/24 - shutter 1/50
720p/60 - for closest cadence to 24p, shutter 1/60. Never go below 1/60 for 720p, GH-1 will double frames
- for slow motion, shutter 1/100+ to your preference for less motion blur

ISO - up to you. I think some people prefer not to go over 400-640. I've been fine with 800 when I'm forced to. 1600 has a major loss of saturation and is quite noisy. I haven't tried 1000/1250 as much.
