Getting Line In audio

We could probably help you if we knew what recorder you are talking about.

But generically speaking....
The line outputs in that photo appear to be the kind you could expect to feed into line inputs on a recorder.

The photos I find online show that a Sony PCM-M10 has a 3.5mm stereo mini-phone jack on the top for LINE INPUT.

That Crestron gadget appears to offer line-level stereo output from the pair of RCA jacks.
From that evidence, it appears that you need a simple cable like this....

Of course, that Crestron gadget is only a small part of a larger, custom-programmable system. So While the Crestron gadget has the potential of sending a stereo line-level mix out of those RCA jacks, it is up to the operators of the system to program and operate the system to actually SEND the desired signal to that output.

If it were me, I would arrange an advance meeting with the venue operators and organize a test to confirm end-to-end integrity.
