FS7: FS7 - help controlling ISO and Aperture

I've recently upgraded from a Canon C100 to Sony FS7 and I'm struggling with something so simple.

When using the FS7 body without the attached grip, is there not a way to control ISO and lens aperture independently (Canon lens on a Metabones adapter) via 2 separate dials on the side of the camera? What I've doing is controlling the aperture with via the "IRIS Dial" and then go back into the menu and changing the "Assignable Dial" to ISO/Gain/EI to change my ISO.

Is there a better, quicker way of doing this for run & gun shooting?
 
Thanks Bern. I guess I'm just so used to "riding" the ISO on the C100 and other smaller cameras like the A7S series that the dedicated three pre-defined ISO/EI weren't enough. A learning curve I guess. Thanks
 
The FS7 ain't no DSLR or C100. I suggest breaking yourself of that awful habit you guys have picked up of constantly rolling the ISO up and down. I don't care what anyone says, or how clean the camera is, that is not the way to run exposure on a pro video camera.
 
Since I got my F3 I stopped riding ISO as an exposure tool. Staying at the same ISO makes all shots have the same amount of noise and much more consistent. With the native ISO at 2000 on the FS7 I never see the need to change ISO.
