...from FCP 5.. What's my best choice if I want to put this on DVD?

3 hours is really pushing it. You might be able to do it if you lower the bitrate in compressor to an average of 4 and a peak of 4.5...Audio must be AAC (do not use AIFF).
Also remember, DVD menus take up space too. I suggest you do not use a menu system and make the track the first play in order to save space.
