ex-3 noise in total darkness

When I put the lens cap on and set gain to -3 to I still have noise is this normal for a EX-3?

It's normal for any camera. -3db doesn't mean no noise, it just means you're not adding any additional noise. Any time the light level falls below the camera's noise floor you're going to see noise.
 
Thansk sounds that my ex-3 is okay , this only happens in hd when I use the video out dv I don't see the noise anymore

Doesn't mean anything. There could be all sorts of things going on in the output signal that cause it to display differently. What matters is the recorded footage.
