I moved up from the GH5S to the S1H (I still own both), and one of the biggest things I noticed is the excellent highlight roll off and overall dynamic range improvements in V-Log. The other surprising observation is the greatly reduced internal noise reduction. It's not completely turned off, but as I recall the comparisons between the GH5S and the EVA-1 from a noise perspective, this was one of the big downsides of the GH5S.
I haven't shot with the EVA-1, but skin tones are excellent on the S1H.
