Doc Interview camera settings

I am currently in pre-production of a documentary film and I am looking for advice/experience on what kind of settings work best for filmming stationary tripod shots with a DVX 100b of interviews for a documentary film.

There is also the possibility of using a second camera (Canon with HD) for some other shots.

The hope is to use both cameras' footage together in a single interview.

Any advice?

Thanks

I looked through my notes and found these for documentary settigns, might be a good place to start.
