Director talking while shooting

It all depends on the shoot. If you have time/money...ADR is used for dialog replacement. That is always a fun task...

Almost all sound you hear in films is generated after the fact.

On occasion people do shoot SYNC sound, where we are recording for the actual take. Which required absolute silence on set by everyone since the work isn't done in ADR. Even if ADR is used, we need a reference point. So that is SYNC as well.

I'm in the middle of shooting a B+W silent film. No problems talking to actors throughout the takes there. It's a wonderful thing, and saves a lot of time since this film has numerous long takes so just giving saying the cues myself helps get the timing we need very quickly. Many times the first take (after a rehearsal or two beforehand).

In most of the shoots I work on, the directors are silent throughout and will only speak inbetween takes. If we do a series then they may cut the performance but ask the cameras to keep rolling, give them directions and then have them start again from 1 or the pickup.

Comedies are pretty funny (ahem) to do this way. The director and many of the crew can often be seen stifling laughs as the scene plays. As an actor it's a lot less distracting than actual laughter would be, but you still have to make a conscious effort to ignore it.
