Color grading with the HVX on flat image

Hi! On the video below, they are talking about color grading from a flat image.

My question is: can I do that with the hvx200 and how? (which setting) And does it worth it or should I just shoot my footage with regular setting?

The scene files in the camera are where you would make those type of adjustments. If you are using the default 6 scene files, scene file number one is basically a flat preset. If you select it and look at the settings, you will notice pretty much all the color, temp, pedestal, etc. are all set to 0. On each parameter, as you decrease from zero or increase from zero you are subtracting/adding some of that parameter.
 
I used to shoot the scene file 6 which is flat but found that scene file 4 was actually better. It gives you that HVX look and does not require as much light to get exposure. Also, the saturation is nice. Up to you though.

One thing the HVX stock #6 scene isn't, is flat. The cine type scene files never are. Also, just because the Panny scene file is set to zero, that doesn't necessarily make it flat either depending on the parameter. Getting to the issue raised by the OP; do you want to shoot a very flat scene file and edit in post to achieve the desired look, or try and do as much as possible within the cam. If you do the former, you won't have to deal with the camera effects which are burned into the footage. If you do the latter, you can significantly reduce the amount of post editing, IF you have created, tested and are confident in the scene file parameters you shoot with will achieve the look you want.

To get the most FLAT picture from the HVX200 camera you can use standard preset called "CINE D".
Today I tested scene's settings a bit and I found next settings is good to go to post:
OPERATION TYPE - VIDEO CAM
FRAMERATE 25FRAME (I am live in PAL country)
SYNCRO SCAN 1/50.0 (thats because equal to fps and to voltage frequency in our country - 220V/50Hz. It helps me avoid light flickering).
DETAIL LEVEL 0
V DETAIL LEVEL 0
DETAIL CORING 0 (I found this three settings very compromising to me when 0 number used)
CHROMA LEVEL -2 (Protecting individual color channels here from clipping. Especially noticeable when shooting bright red things like flowers and clothes).
CHROMA PHASE 0
COLOR TEMP -2 (Even after blackshading my camera I often see blue noise in the blacks. Thats only the reason to shift colors to warm a bit. It just easy to color correct my footage after for me. Possibly it is only my own camera problem).
MPED 0 (No clipping of shadows possible with this setting. But when MPED setted to high numbers I notice than I am losing colors in the shadows areas).
A. IRIS 0
NEWS GAMMA OFF (This setting is really strethes the midrange by the cost of highlights. I found accurate highlights is more important for me. Possibly to get the better skintones we can try to turn this option ON).
GAMMA CINELIKE D (The best avialable dynamic range for HVX here).
KNEE LOW (I dont like the idea that my camera will save highlights for me. So the LOW is the most affordable setting for me. Kneeing from 80% here. This setting regarded to today's testing).
MATRIX NORM1 (Wow! It was an opening for me after a 4 years of using my HVX! Almost all of the time I used CINE-LIKE setting. It was wrong. Very oversaturated setting it was. NORM1 is not so saturated so I prefere it).
SKIN TONE DTL OFF (I dont like the idea to lost any skintone regarded data here).
V DETAIL FREQ THICK (for SD setting and useless here).
