capturing composite or component vs 1394?

My firewire on my DSR-11 is busted, so I had to use the component/composite for capturing. I noticed a difference in the color already, but wanted to know if any additonal recompression is going on vs 1394 (which should just be a data dump).

Well, you are going digital to analog to digital. This is not the best way to get your footage into a computer. Component and composite are different. Which, exactly are you using? Component output is superior to composite output, especially when it comes to color.

I am using component and saw that the color was richer and more saturated than the 1394. Is this good or bad?

What this might mean is that your setup failed to properly terminate (75 Ohm) the analog video output.

Regardless, the additional mode conversions (digital -> analog -> digital) will certainly add noise, color errors are also more probable (as you have encountered) and the dynamic range will be less.
