My Laptop came with software bundled with the soundcard drivers that does that. YOu can also find it on most any karaoke machine. Try searching for Karaoke software I'm sure it exists. By the way, it is not the greatest sounding effect, while the vocals will be mostly muted there is still usually a hint of the vocals on the track, kind of like they are very far away sounding. There is also usually some digital artifacting (tingy like sound) that comes through. But some software might be better than others.
I remember way back when I was 13 or 14 and the sega CD came out (Sega genesis CD drive). My friend was spoiled rotten and he got one of those. Anyway it had built in software that would allow you to take out the vocals from the tracks when playing an audio CD. And that was over 10 years ago. man I'm old.

While there is software that does take out parts of the vocal spectrum it leaves a lot behind and takes out parts of the instruments also.
I don't know what you are looking for but you could just download the midi file for most popular songs. I think you will generally like the results better.
