Can the DVX look like Godard's "Band of Outsiders"??

I LOVE the way that movie looks. It's grainy, black and white and appears as though they used little to no extra lighting for the entire movie. I know the DVX doesn't have a b/w setting, but could I film in color and then do something to it in post to make it look like Band of Outsiders?

I am planning on a film blowup when Miramax buys my film btw =)

Yeah, you could desaturate the color and add grain in post. Shouldn't be a big chore.
