Burn in camera or flat look?

If you have a particular look in mind for a scene is it better to get that in camera? For scenes where you don't know what u want maybe thats where you should use the flat styles for post? I have my 5d for a few days now and i have a very stupid question....Um how do you guys set exposure? Ive been using the histogram making sure the waveform is mostly in the middle. Im sure i don't have to use my old sekonik meter from my school days lol.

There's also a exposure meter at the bottom of your LCD screen. It doesn't really activate until you depress the shutter button halfway (on the 5DII and probably the others as well).

I use a more flat picture style via the neutral preset... sometimes when using the baked in stock picture styles you can get more noise in the shadows, less latitude in the image, etc... if you have more of a flat picture style you can go into post and tweak it as necessary. If you don't have time to go back and color grade/correct, then maybe a tweaked picture style will work for you... start testing.

I have been using the histogram with the exposure roughly in the middle so the highlights and shadows aren't completely destroyed... the best thing you could do is have good lighting or a light meter to get really accurate readings.

The flat profile really shows great results after grading in post. After reading the no film school article it says there was somewhat of a debate on this topic? Some saying the flat profiles add some noise. As for exposure ill dig out my old spotmeter and start testing.
