What are the black and white capabilities of the dvx?

Can it be done in post and look nice?

That's the preferred method. The DVX doesn't really have a way to shoot B&W in camera. Besides, doing it in post gives you many more options (such as deciding that you like the color and wanting to keep it). Shooting B&W in camera robs you of those options.

You can set the viewfinder to B&W to give you an idea of what you're shots could look like -- some people suggest that makes focusing easier too.

The point at issue, is work your scenes whith contrast no whith color, as he say gabe, B&W viewfinder or a field monitor whithout colour.
