Black and White Settings on the HMC 150?

I am shooting a music video on Thursday and will be using a color pass effect (Schindler's List, Pleasantville), where I will shoot in color but will desaturate in post leaving only one color, in my instance Red. I will be shooting against a white cyc backdrop.
I wanted to know if anybody had found any setting that work well with doing this kind of effect. Ideally, I just want a clear crisp image, that the color looks good in, but will also translate well to black and white without looking too blown out or too contrasty.

Any suggestions are welcome, thanks in advance.

You are asking for quite a bit here. Good on-set lighting is as important as anything else you will need to think about.

id say as a quick thing you could do is set the f stop to around 5.6 to capture a good range of tones

Make some pre shot tests at different settings and try to edit them. Look which setup is the best.
