Basic gimbal questions

I want to use a ST-500 to stabilize some footage shot with a light weight camera. I've never used a stabilizer before.

With the camera attached, add the counter weights added, should I be able to hold the handle and expect the camera to be balanced with only one hand? OR do I need to use my other hand to get it level?

Thanks.

You should balance it so that it's level when you hold it with one hand, but you will need a second hand to pan and tilt the camera as you walk.

I wouldn't recommend that stabilizer though, one like the Merlin with a universal joint instead of a ball head would be better. Look at secondhand stabilizers from Steadicam, Glidecam, Laing, Came, and Kovacam.
