Does anyone know if Avid Xpress or MC can be installed on a Mac that already has FCP on it?

You can do it.
Because each one uses a slightly different version of Quicktime, I would recommend that you have two boot partitions on your hard drive, one for FCPro, and one for Avid.
Then give each one whatever is the most stable version of OSX and QT for it.
