If you are using FCP 5.1.2. there is a button in the import P2 window called "import settings". You cant turn off the audio channels that you dont want to import. If you're using an earlier version you are stuck importing all four channels so you will just have to delete the ones you dont want from the timeline.

That is because DVCPRO-HD records 4 channels of audio. You're camera is only recording to two of them. Here's some things you can do.

In FCP 5.1.2 you can set it to only import the two your using.

When you open a clip in the Viewer, look at the Timeline, and you'll see 4 patch tabs in the audio section. Click the bottom two to detach them from their tracks. Then do your nomral overwrite edit (F10).

Once in the Timeline with 4 audio tracks, unlink the clip and delete the second unused two, then relink the clip.
