Audio Levels and Mics

Hi, how do you set the audio level controls? Is it just by using the dials on the side of the camcorder? One person suggested if I'm using an external mic, I should plug it into XLR input 2 so I can have both channels record dialogue and set one channel's levels to -20dBFS with the other channel's levels at -10dBFS to help me recover from clipping if it occurs. Does this sound like a good idea? I have MKH416 and MKH70 mics. Should I engage the MIC ALC? Thanks for any help.

I would definitely record one channel of the same mic at a lower frequency than the other, just in case of clipping. It gives you the most options in post - sounds like a plan!
