GH3 Am I the only one who doesnt (want to) shoot flat?

I am curious how many people shoot the flattest image possible with the GH3?
I do a lot of weddings and other event event videography that require a LOT of shots and editing in post. In order to streamline my editing, I need to get the best image possible right out of the camera.

I also have to deliver my raw footage on a regular basis to various clients and I prefer not to give them images that are too flat, either.

Does anyone else shoot as I do? If so, what settings have you found to the best for in-camera image quality?
 
I usually turn down contrast/sharpening/ and to a certain extent noise reduction but leave the chroma alone and try to get something in camera I'm happy with.

I just find normal camrea contrast and sharpening too much and would rather control in post to my desire. So I guess I shoot low contrast but not flat.
