Adjust exposure compensation after auto exposure lock?

Why don't the D5100 or D3100 let you adjust exposure compensation after hitting auto exposure lock? For filmmaking it's not so much an auto exposure lock as it is a disabling of the auto exposure, so why is it that you can't make adjustments after? If Nikon could alter this (and allow exposure compensation in manual for non chip lenses) this would be great.

I have one I made out of two polarizers, but it seems like I lose at least 1 stop even wide open. Should I try a better solution?

No that's normal. Once iso comes into play then (in lower light) you shouldn't need to use a fader at all...
