GH5 A Couple More Newbie Questions / Photo Style Settings and Color Bars

I've had my GH5 for about 3-4 weeks now and I'm feeling pretty comfortable with it now. But I had just a couple of questions about things I do not really understand.

On the Photo Styles, I have watched several You Tube videos and on many videos I see people dialing down Sharpness, Contrast, and Noise Reduction to -5, most of the time. My questions are:

When you decrease these settings, aren't you baking in these attributes? Is there some advantage to doing that in-camera? Can't all those be adjusted in post?

With NR at zero, what is achieved by lowering it -5? Isn't NR a good thing?

And my last question (I swear), is it possible to calibrate the monitor on the GH5? I see it has color bars AND monitor settings, but it doesn't appear that you can actually adjust the monitor with the internal color bars. Are the color bars for an external monitor or just a reference to be used in post?

I'm coming from the FS7, so things are definitely different on the GH5.

Thank you very much.
