This is why the cinelenses are so nice. Controlling focus is so much easier. Even on a 5D it's makes a huge difference. The EF lenses are designed to be controlled by the camera's AF while the Cinelense is designed for manual focus. Even if you aren't using a focus puller, they are nice to use for critical focus.

What I do: leave the loupe permanently in the camera, and forget the camera even has an optical viewfinder. And zoom-in for focus, just as I do for video.
...Is there a good way to find focus with manual lenses not using Live View mode but through the viewfinder using the focusing screen?
Could you not use the digital zoom function to get your focus?
DSLRs no longer have the micro prism ring surrounding a split image to aid manual focusing. However on the 5D3 you can switch to manual focus, hold the shutter half-pressed, then turn the lens focus ring. Upon finding a focus solution, it will beep, the selected AF point will blink red, and the viewfinder focus confirmation light (at bottom right) will illuminate. The works for all AF point selection modes. If you don't want the beep you can turn that off. The focus confirmation light will still illuminate in the viewfinder, and the selected AF point will blink red.
Note the "release priority" setting is not enforced in manual focus mode. So even if set to "focus priority", whether the focus confirmation light illuminates or not, it will still take the photo.
The problem is it doesn't appear to work for completely dumb nonelectronic lenses. When I use a piece of cinema glass there is no beep when I turn through the focus range at all.
^ My method is only good if all your lenses are fully manual (no AF), as is my case
Plus, you can disable image preview if that's bothering you.
I use Nikon to EF adapter with AF confirmation chip often. When shooting stills through viewfinder, you can half click to confirm your focus. When focused, you'll hear a beep sound from 5D3. Having said that, I think the best way is still to use a LCD viewfinder.
Disabling the image preview does not speed up liveview shooting at all. It's still slow as hell. Manually shooting with viewfinder = FAST (except nothing is in focus), manually shooting with liveview = SLOW because after every shot there is a 1-2 sec delay before liveview switches back on.
...It appears that camera to lens communication is a one way street. That is it goes from camera to lens but not from lens to camera. I learned that researching the Okii follow focus watching this YouTube video...
