The Odyssey7Q+ can accept and record 2048x1080 in video modes. This is a DCI SMPTE spec. 2048x1152 is a camera-specific spec designed to oversample a 16x9 format, while 2048x1080 is a 17x9 theatrical release spec. This is akin to the difference between DCI 4K (4096x2160) v. UHD (3840x2160).
There are indeed cameras and other devices that do output 2048x1080, including the Canon C500 in 12-bit 4:4:4.
You either 'scale to fit' on a 1080p timeline - which will result in thin black borders top and bottom. Or you scale the 2K source to the fill the 1080p window and lose a little off the 2K source each side. Choice is yours.
No such thing as true 2k. Just 2k DCI (2048x1152), or 2k 16x9 (2048x1080)...or 2k 2:39 (2048x858), amongst other more custom matte sizes.
However, instead of cropping, just set your timeline on your project to the exact resolution or aspect ratio of your footage. In this case, you can set your project file to 2048x1152 and you get rid of black lines and you don't crop or stretch. But if you are mixing in footage with different aspect ratios than you will have to choose which files you want to crop or alter.
