In his DramaFest entry ( http://www.dvxuser.com/V6/showthread.php?t=76498 ) Ryan lists his Craft Services choices via the following document: http://www.235studios.com/semele/235CraftServices.pdf

He says this about the list, "This list will serve 15 people for at least one day, and has been developed from years of experience."

When I shot my HeroFest entry, I didn't know exactly what to do in this area either. It was only a single day of shooting, but I still felt it only right to feed the cast/crew since they were working for free.

First thing in the morning, I had starbucks coffee brought in. I also had bottled water, juice, muffins, and croissants (from Costco). Those items were then available the rest of the day.

At lunch time, I had chips/salsa/dip, various kinds of sandwiches (e.g. cheese, cold cut, etc), cookies, water, and soda. And, again, these items were left out for the remainder of the shoot that day.

We had a small crew, so everyone stayed pretty busy all day. The water is what got used the most - I would recommend, however, that you include a felt marking pen near the water so people can write their name on the water bottle. I say this because I opened at least 5 bottles that I only took one or two drinks out of. Then I would set it down and 3 or 4 camera setups later when I went to take a drink, couldn't remember which bottle was mine. So I'd open a new one.

Hope that helps,
Larry

Is this for Craft Service only, or also for catering?

For Craft Service the link Larry provided above is GREAT, for catering, here's what what I've done in the past.

Smuggler's Ransom

Day 1 - LUNCH Salad's and BBQ Tri-tip from local place in town.
DINNER A Taco and Burrito platter from Baja Fresh

Day 2 - Pizza (have to have a pizza day some time)

Day 3 - Panda Express (most people like it, and it's suprisingly cheap!)

Day 4 - Sub Sandwiches from Subway

Captain Fundraiser

Day 1 - Pizza

Day 2 - Sub Sandwiches (from Costco)

Day 3 - Panda Express

Oh, that tears it. If I'm ever out there we're playing a round at that course, Hudson.

Stay away from heavy red-meat meals and too much grease. People love a pizza day, but don't show up with double pepperoni or everybody will be falling asleep after lunch.

EDIT: You can offset some of the effects of red-meat with RedBull. :)

Does anyone know the history as to how all of this got started? I have never had a job that paid for my lunch on a daily basis.

It's because in film shoots often everyone is in a town they are not used to and lunch is an hour tops, you cannot afford to have crew stay longer, get stuck in traffic, etc. It's much more efficient to simply pay for them to be fed on set then risk them going out to get their own food and being late.

And for indies (which is what most of here are), we pay our crew little or nothing (I'm in the nothing category) and so good craft services is extremely important. I spend $100-$200 per day on crafty to keep my people happy. I figure if I get professionals to come work on my story for a day, I damn well better feed them properly.
