I've heard these countryman emw are the best bang for the buck. I'm mixed up though, is there an actual difference between wired and wireless lavs? Or is it the same mic with merely a different system to send the audio signal to the recording device? Or do some lavs, like the emw, ONLY work when hard wired?

AFAIK all mics can be used wired or wireless. To use wired they'll need an adapter or sorts to adapter phantom power to bias power - that's usually built into the xlr connector itself. Its just a matter of how you order the lav. You can get the EMW (and other lavs) wired for XLR, g2, lectro etc. etc.
