What's something easy to make and hard to screw up that would impress my fiance for a delayed Valentines day dinner?

I'm currently capable of making frozen pizza and soup. Which wouldn't impress her.

Chili. It takes a long time to prepare, but it is impossible to screw up. It freezes well, and actually gets better over time.

Here's the recipe I use:
- 2 lbs lean hamburger meat (can use ground turkey if you prefer - tastes the same)
- 60 oz diced tomatos
- 40 oz kidney beans
- 2 large chopped onions
- 3 Tablespoons Worcestershire Sauce
- 1 heaping Tablespoon chili powder
- 1 teaspoon salt
- 1 cup water

Brown meat in butter or margarine. Put onions in skillet with meat. When meat browns, put water, chili powder, part of tomato in. Stir and let simmer until starts to boil.

Stir salt and Worcestshire in beans first, then combine meat sauce with beans and rest of tomato in "roaster". 300 degrees for about 3 hours. Stir occasionally.

You can add whatever extra ingredients or spices you want without much danger of screwing it up. Just don't go overdo the salt, and you should be fine.

I'm not sure about the dinner but you definitely want a chocolate dessert of some kind.

This looks hard but if you do it step by step it's easy. Just never open the oven door while a souffle is rising because it'll deflate.
I've made souffles before and I'm a burger and hot dog guy so it's not hard.

With a desert like this you 'might' even get away with ordering out, like Chinese or Italian food, and end it with this desert. Or make your own dinner.

Heck, toss in a bottle of Red wine too (not white wine).

You could do a quick and easy shrimp alfredo.

If you dont feel safe making it from scratch, you can always do this- its easy:

Buy this at the store:
raw shrimp (peeled and deveined)
Some pasta (what ever you like- linguine is good)
Premade alfredo sauce (Classico brand is good)
Small block of fresh parmesan cheese (to grate on top)
Some fresh basil
Good White wine for drinking

1. Cook the pasta al dente, pull and drain (rinse with cold water to stop cooking and drain)
2. Saute peeled shrimp in pan with a bit of butter (Carful your pan isnt so hot that it burns the butter or let it start smoking)
3. Once shrimp turn pink, turn down heat to simmer- add in your store bought sauce and cooked noodles (cover pan untill everything is heated up)
(dont add any salt)

Serve it pretty on a plate, grate fresh parmesan cheese over it- then garnish with a pretty little basil leaf or two- enjoy with the white wine and your fiance will think you really can cook!

Get some pasta, penne is my favorite, some heavy cream, diced tomatoes, garlic, chicken broth, onion and maybe some chicken and/or vegetables.

Sautee the onion and garlic together. When it's decently seared, add a bit of broth and heavy cream, more cream than broth. Boil it. Add tomatoes as you see fit. Boil until the liquid is reduced by about half, so it should be decently thick. If it's not you can add flour to thicken it; that's the part that makes it easy, you can compensate for any amounts you change you mind on. That gives you a nice heavy cream sauce, and the tomato adds quite a bit in my opinion.

Drizzle that over some pasta, along with freshly grated parm, seasonings and chicken. It's good stuff if you're up for experimenting with it.
