what would be the easiest way to create titles like this

The DON'T HATE titles during the video?
You can do it like this:
V1 - Your original track over which you want to put the titles
V2 - The text, either created using FCP's text generator or an image with an alpha channel
V3 - The track that you want to appear inside the text.
Finally, select the top track (V3) and change it's Composite Mode (in Modify) to Travel Matte - Alpha

Wow that's cool I just tried that. Never really worked with composite modes in fcp before. Great stuff Cools!
